This sweet and savory bake is a perfect accompaniment to bring a fall flavor to your table. Sweet enough to be a desert, but packed with enough good stuff to count as your veggies.
Ingredients
  • 2 Beccari’s Acorn Squash
  • 3 Beccari’s Cooking Apples
  • lemon juice
  • ¼ Cup raisins
  • dash of ground cinnamon
  • ¼ Cup maple syrup
Instructions
  1. Preheat oven to 350 degrees.
  2. Core apples. Cut squash and apples into half-inch-thick round slices. Brush apple slices with lemon juice to prevent browning.
  3. In a 3-quart casserole, layer squash and apples. Sprinkle with raisins and cinnamon.
  4. Cover and bake for 50 minutes at 350 degrees F.
  5. Drizzle squash and apples with maple syrup and bake for another 5 minutes or until the squash is tender.

Peach Cobbler

This cobbler made with fresh peaches is delicious by itself, or even better served over vanilla ice cream.

Beccari’s Peach Cobbler

Delicious by itself or served over vanilla ice cream.
Ingredients
  • 6 – 8 Ripe Beccari’s Peaches
  • 1 tsp lemon juice
  • ½ Cup sugar
  • ½ tsp cinnamon
  • Topping:
  • 1 Cup sugar
  • 1 Cup flour
  • ¾ Cup butter
Instructions
  1. Peel and cut peaches. Slice into bowl.
  2. Add lemon juice, cinnamon, and ½ Cup sugar. Blend until peaches are well coated. Place mixture into a 9 in x 13 in baking dish.
  3. Preheat oven to 375 degrees.
  4. Mix topping ingredients in a separate bowl. Pat on top of peaches.
  5. Bake in preheated oven for 30 minutes or until peach juice has solidified. Serve warm.

 

Fresh Apple Cake

Fresh-from-the-farm apples make this cake one you won’t soon forget. Serve as a breakfast treat or as a dessert a la mode.
Ingredients
  • 2 Cups flour
  • 2 Cups sugar
  • 2 tsp cinnamon
  • 2 tsp baking soda
  • 1 tsp salt
  • 4 Cups chopped Beccari’s Apples
  • 1 Cup chopped walnuts
  • 2 slightly beaten eggs
  • · ½ cup oil
Instructions
  1. Preheat oven to 350 degrees.
  2. Sift together the following ingredients: flour, sugar, cinnamon, baking soda, salt.
  3. Mix in remaining ingredients.
  4. Bake in a 9 in. x 13 in. pan for 45 minutes or until baked.
